This garlic smashed potatoes recipe is a fun, easy holiday side dish. We'll let you in on a little secret: you can prep this recipe ahead of time! When the big day arrives, just smash those pre-cooked potatoes, slather with the butter garlic sauce, and pop in the oven.

    Position rack in centre of oven, then preheat to 425°F. Line 2 rimmed baking sheets with parchment.

    Cover potatoes with salted water in a large saucepan set over high. Bring to a boil, then reduce heat to low. Simmer until potatoes are fork tender, about 12 minutes. Drain.

    Heat a large frying pan over medium. Add butter, oil and garlic. Cook, stirring often, until garlic is softened, about 3 minutes. Stir in parsley, salt and black pepper.

    Divide potatoes between prepared sheets. Flatten each potato with the back of a measuring cup or drinking glass. Brush potatoes with butter mixture.

    Bake until potatoes begin to brown and are warmed through, about 20 to 25 minutes. Sprinkle with chives before serving.

    Make-ahead: Boil potatoes and make butter mixture as directed. Cover and refrigerate each. When ready to cook, preheat oven and flatten potatoes on parchment-lined baking sheets. Warm butter mixture in the microwave. Brush butter mixture over potatoes. Bake as directed.
