    Combine carrots with just enough water to cover in a medium saucepan set over high. Bring to a boil, then reduce heat to medium. Cook until carrots are tender-crisp, about 6 minutes.

    Drain carrots, then return to saucepan. Add margarine, maple syrup and mustard. Stir until heated through. Transfer to a platter. Sprinkle with parsley.
