Maple-Glazed Roasted Pork Loin

Roasted pork loin is an easy—and affordable—Sunday meal. This recipe pairs it with a sweet apple, cranberry and maple glaze during the final few minutes of roasting for a fragrant and sticky pork glaze that everyone will love. Serve with pan juices over mashed potatoes.

    Position rack in centre of oven, then preheat to 425°F.

    Place pork in a roasting pan. Coat pork with oil, then season with salt and pepper. Roast for 10 minutes, then reduce oven to 350°F. Continue roasting until an instant-read thermometer inserted into centre reaches 145°F, about 30 minutes.

    Meanwhile, combine chicken broth and cinnamon stick in a small saucepan. Place over high and bring to a boil. Reduce heat to medium and simmer until liquid is reduced by half, about 8 to 10 minutes. Add apple and cranberries and cook until apple is tender and liquid is slightly thickened, about 5 minutes. Stir in maple syrup.

    Spoon some of the liquid in maple mixture over pork during last 5 minutes of roasting. Transfer pork to a cutting board and let stand 10 minutes before slicing. Serve pork with fruit mixture and pan juices.
