
Maple Sausage and Herb Breakfast Casserole Recipe

In a large skillet, warm the olive oil over medium heat. Add the sausage and break up into small pieces with the back of a wooden spoon. Cook until it is no longer pink, about 4-6 minutes. Add the shallot and cook for about a minute. Remove sausage to a plate lined with paper towel. Set aside.

Grease a 9x13-in baking dish and scatter the bread cubes along the bottom of the pan in an even layer.

In a large bowl, mix the eggs, milk, cream, 1 cup of the cheese, thyme, sage, salt and pepper.

Pour half the egg mixture over the bread. Top with the sausage mixture then pour the rest of the egg mixture over top. Sprinkle the top with the remaining cheese.

Cover and place in the refrigerator overnight.

In the morning, take your casserole out of the refrigerator and set on the counter while your oven heats.

Preheat the oven to 375°F. Bake the casserole, uncovered, until the top is golden, edges are crisp and a toothpick inserted into the center comes out clean, about 40-45 minutes. Allow to cool for 10 minutes, then garnish with remaining thyme, slice and serve.
