
Wholesome Carrot Muffins

Position rack in centre of oven, then preheat to 400°F. Mist a 12-cup muffin pan with cooking spray or line with paper liners.

Combine oats, both flours, sugar, baking powder, cinnamon, baking soda and salt in large bowl and mix well.

Combine pineapple (with juice), carrots, milk, oil and egg in medium bowl and mix well. Add to oat mixture and stir until just combined. Stir in raisins. Divide batter among muffin cups.

Bake until golden brown, 20 to 22 minutes. Cool in pan on a wire rack for 5 minutes. Remove from pan and cool for 10 minutes. Serve warm.
