Mediterranean Chicken Breasts Recipe
Sprinkle chicken with salt and black pepper. Heat a large non-stick frying pan over medium. Add oil, then chicken. Cook until golden, about 3 minutes per side.
Combine zucchini, tomatoes, garlic, paprika and oregano in a large bowl. Toss to combine. Scatter zucchini and tomatoes around chicken. Reduce heat to medium-low. Cook, covered, flipping chicken halfway through cooking, until an instant-read thermometer inserted into thickest part of breast reads 165°F, about 8 to 10 minutes.
