Mediterranean Chicken Breasts
Heat a large non-stick frying pan over medium. Sprin- kle chicken with salt. Season with black pepper. Add oil to pan, then add chicken. Cook chicken until golden, 3 min per side. Scatter zucchini and tomatoes around chicken. Sprinkle with paprika and oregano. Cover and reduce heat to medium-low. Simmer, turning chicken halfway through, until it feels springy when pressed, 8 to 10 more min. Add garlic during the last 5 min of cooking.
