Brownie Ice Cream Sandwiches
Position rack in centre of oven, then preheat to 350°F. Line a 10x15-in jelly-roll pan with parchment or foil, then spray with non-stick cooking spray.
Prepare brownie batter following package directions. Pour into prepared pan, and spread batter to edges. Bake until centre is firm when touched, about 17 minutes. Transfer pan to a rack to cool completely, about 2 hours.
Run metal spatula around edges of brownie to loosen and invert onto a large cutting board. Remove parchment. Cut brownie crosswise into 8 slices, then lengthwise into 4 slices. (You will have 32 rectangles.) Freeze 30 minutes.
Cut carton from ice cream and place on cutting board on its side. Cut lengthwise into 4 slices, then cut each slice into 8 slices. Sandwich ice cream slice between two brownies. Roll edges in sprinkles. Freeze until ready to serve.
