Mexican Chicken Lime Soup Recipe
Heat a large pot over medium-low. Add oil, onion and garlic. Cook, stirring occasionally, until onion is tender, about 3 minutes. Add stock and bring to a boil over high heat.
Stir in chicken, reduce heat to low. Simmer, stirring occasionally, until chicken is no longer pink, about 10 minutes.
Ladle into bowls, then top with tomato, avocado, cilantro, lime juice and hot sauce before serving.
