Mexican Breakfast Tacos Recipe
Heat a medium non-stick frying pan over medium heat. Add oil, then crack eggs into pan. Cook, covered, until eggs are just set but yolks are still runny, about 2 to 3 minutes. Transfer to a plate and keep warm.
Add beans, water and garlic and onion powders to same pan over medium-high. Cook, stirring occasionally, until beans are soft and most of liquid is absorbed, about 6 to 7 minutes. Stir in lime juice. Lightly mash with a potato masher.
Spread tortillas with bean mixture, then top with eggs. Sprinkle with tomato and feta.
