    Position rack in centre of oven, then preheat to 350°F. Lightly spray a 12-cup muffin pan with oil.

    Heat a large frying pan over medium. Add oil, then broccoli, bell pepper, green onions, salt and black pepper. Cook, stirring often, until vegetables are tender-crisp, about 6 minutes. Divide evenly between muffin cups.

    Whisk eggs, 1/2 cup cheese and milk in a large bowl. Divide evenly between muffin cups.

    Bake until eggs look set but centre is still jiggly, about 10 minutes. Sprinkle remaining 1/4 cup cheese overtop. Turn on broiler. Broil until eggs are puffed and golden, and cheese is melted and bubbly, about 2 minutes. Let frittatas cool in pan for 2 minutes before removing to serve.
