Ingredients

Broccoli

Red Bell Pepper

Green Onions

    Preheat oven to 350F, then spray a 12-cup muffin pan.2. Heat oil in a large frying pan over medium. Cook broccoli, red pepper, green onions, salt and pepper, stirring often, until vegetables are tender-crisp, about 6 min. Divide among muffin cups.

    Whisk eggs, milkand 1/2 cup of the cheese in a large bowl. Divide among muffin cups.

    Bake until eggs are set and centre is still jiggly, about 10 min. Top with remaining 1/4 cup of the cheese. Broil until eggs are puffed and golden and cheese is melted and bubbly, 2 min. Let cool in pan for 2 min before removing to serve.
