
Mini Burger Recipe With Secret Vegetables

Whirl mushrooms with onion and garlic in a food processor until finely chopped.

Heat a large, wide non-stick frying pan over medium-high. Add 2 tsp oil, then mushroom mixture and 1/4 tsp salt. Cook until vegetables are soft, about 5 minutes. Let cool slightly.

Crumble beef into a large bowl. Stir in mushroom mixture, egg, bread crumbs, black pepper and remaining 1/4 tsp salt until combined. Shape meat mixture into 12 burger patties, about 1/2 in thick. Press a shallow depression in centre of each to help keep their shape during cooking.

Heat same pan over medium. Add remaining 1 tsp oil. Add burgers to pan and cook until bottom is browned, 2 to 3 minutes. Flip burgers and cover pan. Reduce heat to medium-low and continue cooking until burgers are cooked through and an instant-read thermometer inserted into burgers reads 160°F, 2 to 3 more minutes. Serve in toasted buns with your favourite burger toppings.
