Mini Burger Recipe With Secret Vegetables

Sliders, or mini burgers, are perfectly portioned for kids. And this mini burger recipe's surprise addition—a package of sliced mushrooms—is here to help them go the extra mile, by adding an extra nutrient boost to dinner. (Bonus: The mushrooms also keep these bite-sized burgers from drying out.)

    Whirl mushrooms with onion and garlic in a food processor until finely chopped.

    Heat a large, wide non-stick frying pan over medium-high. Add 2 tsp oil, then mushroom mixture and 1/4 tsp salt. Cook until vegetables are soft, about 5 minutes. Let cool slightly.

    Crumble beef into a large bowl. Stir in mushroom mixture, egg, bread crumbs, black pepper and remaining 1/4 tsp salt until combined. Shape meat mixture into 12 burger patties, about 1/2 in thick. Press a shallow depression in centre of each to help keep their shape during cooking.

    Heat same pan over medium. Add remaining 1 tsp oil. Add burgers to pan and cook until bottom is browned, 2 to 3 minutes. Flip burgers and cover pan. Reduce heat to medium-low and continue cooking until burgers are cooked through and an instant-read thermometer inserted into burgers reads 160°F, 2 to 3 more minutes. Serve in toasted buns with your favourite burger toppings.
