Mini Turkey Meatball Subs
Heat oil in a large frying pan over medium. Cook onion, zucchini, garlic, Italian seasoning, salt and pepper, stirring often, until onion is light golden, about 10 min. Stir in kale and cook until wilted, about 3 min. Let cool 10 min.
Preheat oven to 425F, then line a baking sheet with parchment.
Stir egg and breadcrumbs into onion mixture until combined. Stir in turkey. Scoop heaping 1 tbsp of meat mixture and shape into meatballs. Place on prepared baking sheet.
Bake until meatballs are cooked through and outsides are golden, about 15 min
Divide among buns then top with pizza sauce and mozzarella. Broil until buns are toasted and cheese is melted, about 2 min. Cut into smaller pieces if desired.
Kitchen Tip: Kids love meatballs. For best results in packed lunches, pack the sauce on the side in a separate container for dipping.
Kitchen Tip: One batch made at the start of the week will last you the entire week. Switch up how they’re served so they don’t lose interest. Subs one day, in a salad the next or just as they are with cheese, crackers and sliced veggies.
