
Mini Turkey Meatball Subs

Heat a large frying pan over medium. Add oil, then onion, zucchini, garlic, Italian seasoning, salt and pepper. Cook, stirring frequently, until softened, about 10 minutes. Add kale and cook until wilted, about 3 minutes. Transfer to a large bowl, then let cool for 10 minutes.

Position racks in centre and upper third of oven, then preheat to 425°F. Line a baking sheet with parchment.

Add turkey, egg and breadcrumbs to vegetable mixture and mix well to combine. Shape into 1-in meatballs, then place onto prepared sheet.

Bake in centre of oven until meatballs are golden brown and cooked through, about 15 minutes.

Switch oven to broil. Place buns on a separate baking sheet. Divide meatballs among buns, then top with pizza sauce and cheese. Broil in top third of oven until buns are toasted and cheese is melted, about 2 minutes. Cut sandwiches in half to serve, if desired.
Kitchen Tip: Kids love meatballs. For best results in packed lunches, pack the sauce on the side in a separate container for dipping.
Kitchen Tip: One batch made at the start of the week will last you the entire week. Switch up how they're served so kids don't lose interest. Serve subs one day, in a salad the next or just as they are with cheese, crackers and sliced veggies.
