Mint, Tomato & Goat Cheese Pizza Recipe
Position rack in centre of oven, then preheat to 425°F. Spray two baking sheets with non-stick cooking spray.
Cut pizza dough into 4 equal portions. Roll out each portion to 6- or 7-in round on a lightly floured surface. Transfer to baking sheets.
Stir mint leaves with oil in a small bowl.
Divide tomato sauce between each pizza, and spread to edges. Top with cheese slices and tomatoes. Drizzle with mint oil.
Bake (in two batches if necessary) until crusts are golden, about 12 to 16 minutes.
Drizzle with more oil, and garnish with whole mint leaves, if desired.
