Mushroom & Thyme Bites Recipe
Heat a large frying pan over medium-high. Add 1 tbsp each of the butter and oil. Add mushrooms and sauté until tender, about 5 minutes. Transfer to a medium bowl and set aside.
Add remaining 1 tbsp each of the butter and oil. Add the onion and cook until softened, about 5 minutes. Lower heat to medium-low. Add the garlic, thyme, brown sugar, salt and pepper and continue to cook, stirring occasionally, until very soft and caramelized, about 25 minutes. Add the broth, and scrape up any bits stuck to the bottom of the pan. Transfer the onion mixture to the bowl with the mushrooms. Allow to cool to room temperature. Add the Gruyère cheese and stir well to combine.
Position racks in top and bottom thirds, then preheat oven to 400°F. Line two baking sheets with parchment.
Spread the puff pastry out on a lightly-floured surface. Cut into 2-inch squares. Transfer to prepared baking sheets. Whisk egg yolk with water in a small bowl. Using a pastry brush, brush the egg mixture over the squares.
Place a scant tablespoon of the caramelized onion mixture in the centre of each square.
Bake until crisp and golden brown, 10 to 12 minutes. Let cool slightly before serving.
