No-Bake Granola & Yogurt Tarts Recipe

This no-bake granola and yogurt tarts recipe is a tasty way to enjoy breakfast, and get some healthful food into your family's bellies. Keep the tart shells ready to go in the freezer for quick and easy assembly.

    For the Tart Shells: Reserve 1/4 cup granola in a small bowl and set aside. Combine remaining granola, almonds and coconut in a food processor. Pulse until coarsely ground. Add dates, coconut oil and 2 tbsp honey. Pulse until mixture sticks together.

    Line a 12-cup muffin pan with paper or foil liners. Divide granola mixture between muffin cups. Press granola over bottom and up the sides firmly with a small drinking glass, or your fingers, to form a cup. Freeze overnight or until firm.

    For the Filling: Stir yogurt, lime juice, lime zest and remaining 4 tbsp honey in a medium bowl. Divide evenly between tart shells.

    For the Topping: Divide mango and blueberries evenly over yogurt mixture. Sprinkle with reserved granola.

    TIP: Make granola cups ahead and freeze in an airtight container until ready to serve.
