
Homemade Oatmeal Bread

Combine 3 cups of flour, oats, sugar, yeast and salt in a large bowl, mixing well.

Heat water, milk and butter in small saucepan, until very warm (120°F to 130°F). Add to flour mixture.

Using an electric mixer, blend on low until dry ingredients are moistened. Increase speed to medium and beat for 3 minutes.

Using a wooden spoon, gradually stir in remaining 3 cups of flour to make a stiff dough.

Turn dough out onto lightly floured surface. Knead until smooth and elastic, about 5 to 8 minutes.

Shape dough into a ball. Place in a greased bowl, turning once. Cover with plastic wrap, then let rise in a warm place until doubled in size, 30 minutes.

Punch down dough to release air bubbles. Cover and let rest for 10 minutes.

Divide dough in half and shape to form loaves. Place in two greased 8x4- or 9x5-in loaf pans. Cover and let rise in a warm place until nearly doubled in size, 15 minutes.

Meanwhile, position rack in centre of oven, then preheat to 375°F.

Bake until tops are dark golden brown, 45 to 50 minutes. Remove loaves from pans to a wire rack. Cool completely before slicing.
