Oatmeal Chocolate Chip Cookies Recipe

These oatmeal cookies are chewy, chocolatey and easy to make (the cookie trifecta). They're also great treat to add to lunches, or snack on after dinner. Tip: Measuring out dough with a tablespoon or small ice cream scoop will help keep your oatmeal cookies uniformly sized.

    Position rack in centre of oven, then preheat to 375°F.

    Combine flour, oats, baking soda and salt in a medium bowl. Set aside.

    Beat margarine with brown sugar in a large bowl, using an electric mixer on medium, until creamy, about 3 minutes. Beat in egg and vanilla until combined. Gradually beat in flour mixture until just combined. Stir in chocolate chips. Drop dough by tablespoonfuls on two baking sheets, 2 in apart.

    Bake until edges are just golden, about 8 minutes. Cool sheets 2 minutes. Then transfer cookies to a rack to cool completely.
