Cinnamon-Raisin Oatmeal Cookies

This recipe makes more than enough to feed a crowd. Tender and chewy, these quick cinnamon-raisin cookies are so good, they're hard to stop eating. Tip: Cookie dough freezes well and is handy to have tucked away for when you're craving something sweet! (To freeze, shape dough according to instructions, freeze on a cookie sheet and store in airtight container.)

    Position rack in centre of oven, then preheat to 350°F.

    Stir flour, cinnamon, baking soda and salt in a medium bowl.

    Beat margarine, sugar and brown sugar in a large bowl, using an electric mixer on medium, until light and fluffy, about 1 to 2 minutes. Beat in eggs and vanilla. Gradually beat in flour mixture until just combined. Stir in oats and raisins.

    Drop dough by tablespoonfuls onto two baking sheets.

    Bake until edges are golden brown, about 10 minutes. Let cookies stand on sheet for 2 minutes, then transfer to a rack to cool completely.
