Oatmeal Macaroons Recipe
Position rack in centre of oven, then preheat to 350°F. Line a baking sheet with parchment.
Beat sugar and margarine in a large bowl with an electric mixer until creamy. Add eggs and almond extract and beat well.
Combine oats, flour, coconut and baking soda in a medium bowl. Add to margarine mixture and stir well to combine.
Drop dough by rounded teaspoonfuls onto prepared sheet.
Bake until light golden brown, 8 to 10 minutes. Let cool on sheet for 2 minutes, then remove to a rack to cool completely. Store tightly covered.
