    Position rack in centre of oven, then preheat to 350°F.

    Stir soup mix, water, sugar, wine and margarine in a small bowl.

    Place ham in large roasting pan, fat-side-up. Score fat, using a very sharp knife, into a diamond cross-hatch pattern. Brush all over with soup mixture. Arrange shallots around ham.

    Roast, stirring shallots and basting ham occasionally with pan juices, until an instant-read thermometer inserted into centre of ham reads 160°F, about 2 ½ hours. Remove ham to a serving platter and cover with foil to keep warm.

    Make the Gravy: Skim fat from pan juices, then combine pan juices, shallots and mustard in a blender. Blend until smooth.

    Carve ham, then serve with gravy.
