Orange juice is one of the easiest ways to dress up a side of sliced carrots. This sauce cooks down into a citrusy glaze (thanks to the sugar), that coats all your carrots evenly.

Fresh mint adds colour and a pop of brightness to every bite.

    Combine carrots, orange juice, margarine and sugar in a medium saucepan set over medium-high. Bring to a boil, then reduce heat to low. Simmer, covered and stirring occasionally, until carrots are tender-crisp, about 15 minutes.

    Remove from heat, then sprinkle with mint.
