Fresh mint adds colour and a pop of brightness to every bite.
Combine carrots, orange juice, margarine and sugar in a medium saucepan set over medium-high. Bring to a boil, then reduce heat to low. Simmer, covered and stirring occasionally, until carrots are tender-crisp, about 15 minutes.
Remove from heat, then sprinkle with mint.
