Oven-Roasted Root Vegetables
Position rack in centre of oven, then preheat to 425°F. Line a baking sheet with parchment.
Combine vegetables, mayonnaise, garlic, rosemary and pepper in a large bowl, tossing well to coat.
Roast until vegetables are tender and golden brown, stirring occasionally, about 35 minutes.
