Pan-Roasted Pork Tenderloin with Gravy

The secret to this pan-roasted pork tenderloin's gravy? Brie cheese. It makes it creamier, and adds its rich, buttery and earthy flavour profile to the pan sauce. Serve with roasted vegetables and mashed potatoes for a crow-pleasing meal.

    Stir water and gravy mix in a medium bowl until dissolved.

    Heat a large nonstick frying pan over medium-high. Add oil, then pork. Brown pork on all sides, about 2 minutes per side.

    Add gravy mixture to pan and bring to a boil. Reduce to medium-low, cover and cook, turning pork occasionally, until an instant-read thermometer inserted in centre reads 145°F, about 20 minutes.

    Remove pork to a cutting board.

    Add Brie to gravy mixture and stir until melted. Slice pork and serve with sauce.
