Pan Seared Salmon Paired With Grapefruit Summer Salad
Pre-heat oven to 350° F (170° C).
Place salmon in a baking dish seasoned with salt, pepper and 1 tbsp (15 ml) of olive oil. Cook for 8 minutes, or until cooked through.
Using a mandolin or sharp knife, shave fennel and onion into a medium mixing bowl and set aside.
Segment grapefruit and add to vegetables.
In a small mixing bowl, combine mustard, honey and the remaining olive oil. Drizzle onto the grapefruit mix and toss.
To serve, arrange the salad mixture on a platter and top with salmon.
