Baked Salmon With Fennel-Grapefruit Salad
Preheat oven to 350°F.
Place salmon in a 9x13-in glass baking dish. Sprinkle with salt, pepper and 1 tbsp olive oil.
Bake salmon until an instant-read thermometer inserted into thickest part of fish reads 158°F, about 8 minutes.
Meanwhile, whisk mustard, honey and remaining 3 tbsp olive oil in a large bowl.
Using a mandolin or sharp knife, shave fennel and onion into bowl with dressing. Segment grapefruit, then add to vegetables.
Toss salad to coat just before serving. To serve, arrange the salad mixture on a platter and top with salmon.
