PEI-Inspired Potato Salad With Bacon
Whisk oil, vinegar, Dijon, sugar, salt and pepper in a large bowl. Set aside. Place potatoes in a large pot of cold salted water. Cover and bring to a boil. Cook until potatoes are just fork-tender, 7 to 8 min. Drain well and immediately toss with oil mixture. Gently stir in dill and green onion. Cook bacon in a large frying pan, stirring occasionally, until crisp and browned, about 6 min. Transfer to a paper towel to drain, then stir into potato salad. Best served warm.
