
Potato Salad With Bacon Recipe

Place red and white potatoes in a large pot of cold salted water. Place over high, cover and bring to a boil. Cook until potatoes are just fork-tender, 7 to 8 minutes.

Meanwhile, whisk oil, vinegar, Dijon, sugar, salt and pepper in a large bowl. Set aside.

Drain potatoes well then immediately add to oil mixture and toss well. Gently stir in dill and green onions.

Place bacon in a large frying pan. Cook over medium, stirring occasionally, until crisp and browned, about 6 minutes.

Transfer to a paper towel to drain, then stir into potato salad and serve immediately.
