    Heat a small non-stick frying pan over medium. Add bell peppers. Cook, stirring occasionally, until tender-crisp, about 2 to 3 minutes.

    Add eggs to pan. Cook, stirring occasionally, until eggs are set, about 2 to 3 minutes.

    Arrange a cheese slice over bottom halves of muffins. Top with egg mixture. Drizzle with barbecue sauce. Sandwich with top half of muffin.
