Slow Cooker Pulled Pork Sandwiches
Stir together chili powder, chipotle chili powder, salt and pepper in a small bowl. Rub spice mixture all over pork.
Place onions and garlic into a slow cooker, then place pork on top. Pour in BBQ sauce and cola.
Cook until fork-tender, 8 to 10 hours on low, or 4 to 6 hours on high.
Remove pork to a cutting board. If pork has a bone, discard it. Using two forks shred meat into bite-sized pieces, discarding any large pieces of fat. Return shredded meat to slow cooker and combine with sauce.
Whisk mayo, vinegar, honey and salt in a large bowl. Add coleslaw mix and toss to coat. Toast buns, if desired. Serve pork on buns with coleslaw.
