BBQ Salmon With Tomato Bruschetta Recipe
Grilling tip: Used oiled aluminum foil to barbecue salmon filets so they will release easily when cooked (nothing ruins a beautiful salmon dinner faster than fish sticking to the grates.)
Combine tomato, onion, garlic, Parmesan and 3 tbsp dressing in a large bowl.
Preheat barbecue to medium. Spray a large sheet heavy-duty foil with non-stick cooking spray. Place foil on barbecue grate. Place salmon on top of foil, flesh-side down.
Barbecue salmon, lid closed, 5 minutes. Flip salmon over and brush with remaining 1 tbsp dressing. Top with tomato mixture. Continue grilling until an instant-read thermometer inserted into thickest part of fish reads 158°F, about 18 to 20 minutes. Sprinkle with basil.
