Cedar-Plank Maple-Ginger Salmon
Soak a cedar plank in warm water for 30 minutes.
Preheat barbecue to high.
Combine vinegar, oil, maple syrup and ginger in a small bowl. Place salmon on a plate and brush with half of maple mixture.
Place soaked plank onto grill. When plank starts to smoke, flip, then place lemon slices over toasted side.
Place salmon, skin side down, on top of lemons, then sprinkle with salt.
Barbecue, lid closed, for 5 minutes. Brush with some of the remaining half of the maple mixture. Continue cooking until salmon flakes easily, about 10 minutes. Remove from plank. Drizzle with remaining maple mixture before serving.
