Pork Chops, Sweet Potato & Rice Recipe
Season pork chops with salt and pepper. Heat a large non-stick frying pan over high. Add 1 tbsp of the oil, then pork chops. Sear until browned, about 2 minutes per side. Transfer to a plate.
Add remaining 1 tbsp of the oil and reduce heat to medium. Add onion and sweet potato, and cook, stirring occasionally, until starting to brown, about 8 minutes.
Stir in rice and broth. Increase heat to high and bring to a boil. Reduce heat to low, cover and simmer for 15 minutes.
Stir in beans and cilantro, then top with pork chops. Cover and cook until an instant-read thermometer inserted into centre of chops reaches 160°F and rice is tender, about 10 minutes.
