Best Pork Stroganoff Recipe
Heat a medium non-stick frying pan over medium-high. Add 1 tbsp margarine, then half of pork. Cook until brown on all sides, then transfer pork to a bowl. Repeat with remaining 1 tbsp margarine and pork, then transfer pork to same bowl.
Reduce heat to medium. Add onion and garlic to pan. Cook, stirring occasionally, until onion is softened and slightly golden, about 3 minutes. Add mushrooms and cook until they begin to give off moisture, about 3 minutes. Stir in flour and cook 1 minute.
Stir in beef broth. Bring to a boil. Cook, stirring occasionally, until sauce starts to thicken slightly, about 5 minutes. Stir in tomato paste and Worcestershire sauce.
Stir sour cream and cornstarch in a small bowl, then stir into sauce. Bring to a boil, then reduce heat to low. Return pork and any juices to pan.
Meanwhile, cook egg noodles in a large pot, following package directions. Drain well.
Serve stroganoff over hot noodles and sprinkle with parsley.
