Corn Chowder Recipe
Tip: Using canned potatoes cuts the cook time significantly, while adding a can of creamed corn gives it an extra-rich flavour.
Heat a large saucepan over medium-high. Add butter, then onion and garlic. Cook, stirring occasionally, until softened and light golden, about 4 to 6 minutes. Pour in broth. Bring to a simmer.
Stir cream and cornstarch in a small bowl until smooth. Slowly add cream mixture to broth, stirring constantly. Bring to another simmer, then reduce heat to medium-low. Simmer, stirring constantly, until thickened, 2 to 3 minutes.
Add potatoes, corn kernels, creamed corn and salt. Simmer until heated through, about 5 minutes.
