Quinoa Salad with Berries Recipe
Place quinoa and water in a medium saucepan. Place over high and bring to a boil. Reduce heat to low, cover and simmer until all the liquid is absorbed, about 15 minutes. Set aside and let cool for 10 minutes.
Whisk oil, vinegar, salt and pepper in a large bowl.
Add quinoa, berries, pumpkin seeds and green onions and toss to combine.
