Quinoa and Berry Salad
Whisk 2 tbsp each olive oil and cider vinegar, 2 sliced green onions, ½ tsp salt and ¼ tsp pepper in a large bowl. Add 2 cups each cooked quinoa and mixed berries and ½ cup toasted pepitas and toss to combine. Serves 4.
