Ingredients

1 cup
Grape Tomatoes
1 can
Corn
1 med
Avocado

Directions

Prep: 15-Minute | Cook: 40-Minute

    Cook UNCLE BEN’S® rice according to directions on the pack. Transfer to a mixing bowl and let cool to room temperature.

    Season corn with lemon & herb seasoning. Roast corn in the oven on a sheet pan, until lightly browned.

    Cut grape or cherry tomatoes in half.

  • 4

    Peel and pit the avocados and dice in ¼” pieces.

  • 5

    Make dressing by combining the ingredients above in a bowl with a whisk. Mix well.

    Toss all ingredients together and season with salt and pepper if desired.
