Coconut milk is an easy way to dress up a side of rice with very little added effort. This coconut rice recipe also gets a boost of plant proteins from kidney beans, making it an extra-filling, flavourful dish. Serve with grilled beef kebabs, chicken skewers and more.

Combine coconut milk, broth, garlic, salt and allspice in a medium saucepan and set over medium-high.

Bring to a boil. Stir in rice. Reduce heat to medium-low. Simmer, covered, until rice is tender and liquid is absorbed, about 20 minutes.

Stir in beans. Remove from heat and let stand, covered, 5 minutes.
