Roasted Asparagus with Parmesan Gremolata
Position rack in centre of oven, then preheat to 425°F.
Trim and discard tough ends of asparagus. Toss asparagus, shallots and margarine in a 9x13-in baking dish.
Roast until asparagus is tender, about 15 minutes.
Meanwhile, combine parsley, cheese and lemon zest in a small bowl.
Sprinkle parsley mixture over roasted vegetables.
