Roasted Cod with Cherry Tomatoes
Position rack in centre oven, then preheat to 425°F.
Combine olive oil and vegetable broth in small microwave-safe bowl. Microwave on high for 20 seconds, then whisk until smooth.
Place tomatoes, shallots, garlic and rosemary in 9x13-in baking dish. Add 1/2 of the olive oil mixture and toss to combine. Roast for 10 minutes.
Arrange cod in centre, pushing vegetables to the sides. Brush remaining oil mixture over cod. Continue roasting until cod flakes with fork, about 10 minutes. To serve, arrange cod and tomato mixture on platter. Garnish with lemon wedges.
