Oven-Roasted Cod & Vegetables Recipe

Fish is brushed with a blend of olive oil and vegetable stock before being cooked alongside mushrooms, tomatoes and shallots for a savoury, light-tasting main course. Our oven-roasted cod and vegetables recipe is a delicious addition to your weeknight meal plan.

Prep: 15 mins | Cook: 25 mins

    Position rack in centre of oven, then preheat to 425°F.

    Stir oil and stock concentrate in a small microwave-safe bowl. Microwave on high for 20 seconds. Stir until smooth.

    Combine mushrooms, cherry tomatoes, shallots and garlic in a shallow roasting pan. Pour half of broth mixture over vegetables. Stir to coat.

    Roast for 10 minutes. Remove pan from oven. Push vegetables to sides of pan, then arrange cod in centre of pan. Brush remaining broth mixture over cod. Continue roasting until an instant-read thermometer inserted into thickest part of fish reads 158°F, about 15 minutes.

    Divide vegetables amongst plates, then top with a cod fillet.
