Garlic Chicken & Vegetables Recipe
Position rack in centre of oven, then preheat to 425°F.
Stir stock concentrate, oil and rosemary in a 9x13-in baking dish. Then add remaining ingredients. Stir to coat.
Roast until an instant-read thermometer inserted into thickest part of thigh reads 165°F, about 45 minutes. Remove chicken to a serving platter.
Remove garlic cloves to a cutting board and mash with a fork. Stir back into vegetable mixture. Top chicken with vegetables, then drizzle with pan juices.
