In our garlic chicken and vegetables recipe, chicken thighs, zucchini, peppers and onions are roasted with rosemary, olive oil and chicken stock, then drizzled with pan juices before serving. This meal takes just 10 minutes of prep before popping it in the oven!

Position rack in centre of oven, then preheat to 425°F.

Stir stock concentrate, oil and rosemary in a 9x13-in baking dish. Then add remaining ingredients. Stir to coat.

Roast until an instant-read thermometer inserted into thickest part of thigh reads 165°F, about 45 minutes. Remove chicken to a serving platter.

Remove garlic cloves to a cutting board and mash with a fork. Stir back into vegetable mixture. Top chicken with vegetables, then drizzle with pan juices.
