
Roasted Vegetable Pasta With Fresh Herbs

Pasta doesn't always tomato sauce. Tonight, make a light, roasted vegetable pasta with garlic and fresh herbs (basil and parsley). Serve with simple grilled chicken (or save time with and use shredded rotisserie chicken) for a full summer meal.

Position rack in centre of oven, then preheat to 450°F.

Stir 4 tbsp margarine and herbs in a large bowl.

Toss vegetables, garlic and remaining 2 tbsp margarine on a baking sheet.

Roast, stirring halfway, until vegetables are tender, about 20 minutes.

Meanwhile, cook farfalle in a medium saucepan following package directions. Drain.

Add roasted vegetables and hot farfalle into herb mixture. Toss to coat.
