Roasted Red Pepper Pasta Recipe
Cook pasta following package directions.
Meanwhile, heat a large non-stick frying pan over medium-high. Add oil, then chicken and onion. Cook, stirring often, until onion starts to brown, about 4 to 6 minutes.
Stir in soup, roasted red peppers, broth and black pepper until combined. Bring to a boil, then reduce heat to medium-low. Simmer until sauce has thickened slightly and chicken is cooked through, about 3 to 5 minutes.
Drain pasta and add to sauce, along with cheese. Stir to coat. Sprinkle parsley and thyme overtop.
