Salmon, Asparagus & Hollandaise Recipe
Position rack in centre of oven, then preheat to 450°F. Brush 2 rimmed baking sheets each with 1 tbsp oil.
Arrange salmon on one prepared sheet and asparagus on second sheet. Drizzle asparagus with 1 tbsp oil, then toss to coat. Brush salmon fillets with remaining 1 tbsp oil. Season each with salt and black pepper, if desired.
Roast until asparagus is tender-crisp and an instant-read thermometer inserted into thickest part of fish reads 158°F, about 12 minutes.
Meanwhile, prepare hollandaise sauce mix following package directions.
Arrange asparagus on plates, then top with a salmon fillet. Drizzle with hollandaise sauce.
