Crispy Chicken Bites Recipe
Combine chicken, onion, soy sauce and cilantro in a large bowl. Mix well, then form mixture into 1-in balls. (You should have 16.)
Heat a large, wide frying pan over medium. Add oil, then meatballs. Cook until browned on all sides and an instant-read thermometer inserted into meatballs reads 165°F, about 15 minutes.
Transfer meatballs into a medium bowl, then drizzle over plum dipping sauce. Toss to coat.
Add puffed rice to another medium bowl. Skewer each meatball with a toothpick, then dip into puffed rice to coat. Place on a platter. Drizzle with extra plum dipping sauce, if desired. Serve warm.
