    Position rack in centre of oven, then preheat to 450°F.

    Combine onion, concentrated stock, oil, garlic, rosemary and pepper in a large bowl. Stir well to combine. Add potatoes and toss to coat.

    Transfer to a 9x13-in baking dish. Roast, stirring occasionally, until potatoes are tender and golden, about 50 minutes.
