Roasted Turkey with Sage
Position rack in bottom third of oven, then preheat to 325°F. Place a rack in a large roasting pan.
Remove turkey from packaging. Remove and discard neck and giblets. Pat turkey dry with paper towels, ensuring cavity is dry. Place turkey, breast-side up, on rack in pan.
Stir sage, seasoning salt, paprika, garlic powder and black pepper in a small bowl. Sprinkle 1 tbsp seasoning mixture inside turkey cavity.
Brush turkey exterior with oil. Spread remaining seasoning mixture over entire surface and under skin of turkey.
Add water to pan. Cover pan loosely with heavy-duty foil.
Roast 1 hour. Remove foil. Continue roasting, basting with juices occasionally, until an instant-read thermometer inserted into thickest part of thigh reads 180°F, about 2 to 2 1/2 more hours. Set aside and let turkey rest for 15 minutes before carving.
