
Niçoise Salad Recipe

Bring the flair of a French bistro to your dinner table tonight! A Niçoise salad is delicious and easy to prepare; boiled potatoes, eggs and blanched green beans are tossed with tuna, greens, olives, cucumbers and tomatoes for a elegant lunch salad.
Tip: To blanch your own beans, boil for three minutes in salted water, removing when bright green and tender-crisp.

Directions

Whisk parsley, vinegar, oil, Dijon and black pepper in a small bowl until smooth.

Toss spring mix with half of dressing in a large bowl. Arrange spring mix on a large platter. Arrange potatoes around edge of platter.

Arrange tuna, tomatoes, potatoes, green beans, eggs, cucumbers and olives in separate sections over spring mix. Drizzle over remaining dressing.
