Salmon with Avocado Dressing Recipe
Position rack in centre of oven, the preheat to 425°F. Line a baking sheet with parchment.
Combine concentrated vegetable stock and oil in small bowl. Stir in 2 tbsp of the cilantro. Reserve 2 tbsp of this mixture in a medium bowl.
Arrange salmon on prepared sheet, then brush with stock mixture. Bake until salmon flakes easily with a fork, about 20 minutes.
Meanwhile, add flesh of avocado, mayonnaise, lime juice and remaining cilantro to reserved stock mixture and mash until smooth. Serve over salmon.
