In our salmon with avocado dressing recipe, fillets are served drizzled with a creamy sauce made of avocado, lime juice and cilantro. This filling main course is ready in less than half an hour— and doesn't cut any corners on flavour.

    Position rack in centre of oven, the preheat to 425°F. Line a baking sheet with parchment.

    Combine concentrated vegetable stock and oil in small bowl. Stir in 2 tbsp of the cilantro. Reserve 2 tbsp of this mixture in a medium bowl.

    Arrange salmon on prepared sheet, then brush with stock mixture. Bake until salmon flakes easily with a fork, about 20 minutes.

    Meanwhile, add flesh of avocado, mayonnaise, lime juice and remaining cilantro to reserved stock mixture and mash until smooth. Serve over salmon.
