
Saucy Lemon-Pepper Shrimp

These lemon-pepper shrimp are perfect by themselves as an hors d'œuvre, or served over rice for an elegant dinner in minutes. Ready in just nine minutes, it's as easy as tossing shrimp in lemon juice and zest with butter, pepper and parsley and hitting start on the microwave.

Toss shrimp, butter, lemon juice, pepper and salt in a 9x13-in microwave-safe baking dish until well combined.

Microwave at 80% power until shrimp turn pink and are cooked through, about 3 1/2 minutes.

Sprinkle with parsley and toss to coat. Serve over rice, if desired.
