Thai Chicken Stir-Fry
Tip: Stir fries cook hot and fast, so it's good idea to have all the ingredients ready to go before beginning.
Combine chicken with 2 tsp soy sauce, 3 tsp lime juice and sesame oil in a medium bowl. Toss to coat.
Whisk gravy mix, water, brown sugar, coconut milk, and remaining 1 tsp soy sauce and 1 tsp lime juice in a medium bowl.
Heat a large non-stick frying pan over medium-high. Add chicken and marinade. Cook, stirring occasionally, until chicken is no longer pink, about 3 minutes. Transfer to a plate.
Add vegetables to same pan. Cook, stirring often, until crisp-tender, about 5 minutes. Stir in chicken and gravy mixtures. Bring to a boil, then reduce heat to low. Simmer 1 minute. Stir in half of basil leaves.
Serve over hot rice and garnish with remaining basil.
