Shepherd’s Pie Recipe
Position rack in centre of oven, then preheat to 400°F. Spray an 8x8-in baking dish with non-stick cooking spray.
Cover potatoes with water in a pot set over high. Bring to a boil, then reduce heat to medium-low. Gently boil until potatoes are fork-tender, about 15 minutes.
Meanwhile, heat a large frying pan over medium-high. Add beef and onion. Cook, stirring occasionally, until no pink remains, about 4 to 5 minutes.
Stir in diced tomatoes, tomato paste, Italian dressing and Worcestershire sauce. Reduce heat to medium-low. Simmer, stirring occasionally, until slightly thickened, about 5 minutes. Transfer beef mixture into prepared dish.
Drain potatoes, then return to pot. Mash lightly. Stir in cream cheese until melted. Stir in ranch dressing. Scoop potato mixture over beef mixture.
Bake until casserole is heated through and top is golden brown, about 20 minutes.
